Carrot Bake From Cathy
4 cups sliced carrots
2/3 cup carrot juice (I have also used vegetable broth)
2/3-3/4 cup ritz cracker crumbs
1 finely chopped onion
2 tbsp. Sharp cheddarCook carrots and mash with butter. Add rest of ingredients and place in casserole dish. Sprinkle with grated sharp cheddar on top.
Bake at 350 degrees for 30 min.
