Fresh cut from our field! We have always encouraged our customers to freeze any extra asparagus they have left over. While it won’t thaw out to be crisp, it makes a beautiful soup with all the same nutrients and antitoxins. Enjoy mother nature’s gift all year long.
Freezing tips: For pureed soup, simply wash, chop and freeze in a freezer bag – cook from frozen. Alternatively, to maintain a little more of the original texture, try blanching it by dunking it into a pot of boiling water for a minute or two and immediately transferring it into ice cold water. Then, drain, package and freeze in desired portion size.
